Cassie + Jacqui are the only other characters with the gap between "____ wins" and "flawless victory" so I'd start there, although its safe to assume if theres 37 total, theres at least one for each character.

To answer your question, could stance alt + 3 be the key? Maybe down + block is the universal trigger for all hidden secrets, then you gotta input 2 more buttons, which are stance + 3 in this case?

Although if you think about it, down + 3 + stance + block seem like an obvious pattern (buttons on edges of the controller)

I think Shinnok might have a hidden one with his throw brutal maybe? It's so simple, all he does is stomp on their face, I might be wrong but idk it always seemed off to me that that's all he does

Either that or the glory hole brutality. They both have a similar stance like Erron's brutality.

The part where it says Brutallity_AreButtonsPressed might be the part where it checks if you are pressing the buttons however you can't tell which buttons. We need to dig through the PC files in order to be able to discover more.
