So after a knockdown when you are getting up you can hold the block button and input any move and that move will come out even though you are holding block. There is a small window for this, so I think mashing works best.
If they do a move that isn't a low, you'll block it. If you want to option select to block lows then you can hold down+back or down+forward and mash a low poke.
If they're sitting there waiting to block a wake-up attack, you'll immediately do your attack and go on the offensive.

You can do this with throws by mashing the throw button while holding block. To block lows and throw, hold down+back or down+forward and mash throw. This is actually BETTER than wake-up throws because wake-up throws get stuffed anyways.
To do this with specials, you have to time the special after you get up so you don't get a wake-up attack. This is harder to do because of the multiple inputs, but it helps some characters like Erron Black who can option select into Command Grab. Again, to block lows, hold down+back or down+forward BEFORE inputting the special.
Your move can still get stuffed so you shouldn't do this everytime. But it's good if your opponent is reading a wake-up attack or if they're trying to react to a delayed wake-up.
(Btw you could do this in Injustice too, ie. Wonder Woman mashing b2 or d3 on knockdown.)
